Start with the prepared extract
Identify extraction conditions, suspended fine material and any filtration or clarification ahead of evaporation. A prepared extract should have a defined inlet condition rather than a changing solids load that the selected plate passages cannot accommodate.
State the liquid flow and concentration basis. Tea and coffee extracts are not interchangeable: composition, soluble solids and processing history can create different deposit and concentrate-handling duties.
Define what quality must be retained
Volatile aroma constituents can travel with generated vapour. Vacuum operation provides a lower boiling condition, but does not establish a supplied aroma-recovery system or guaranteed flavour outcome. Define any required recovery function separately.
Agree a product-specific thermal criterion and the measurements used to assess the concentrate. Compare product samples at a recorded feed, concentration and operating condition if quality performance needs a trial.
Plan concentrate transfer and cleaning
Outlet viscosity and temperature set the product-transfer duty and the receiving interface. Specify the allowed operating interruptions, holding conditions and cleaning schedule alongside the thermal configuration.
Provide product-deposit information and the available cleaning supply. The plate circuit must be compatible with the selected cleaning exposure, while pump connections and separators remain part of the product and return routes.
